Paneer and Vegetable Parathas

Ingredients

  • 3/4 cup whole wheat flour
  • 1/2 teaspoon oil
  • Water as required.
  • Salt to taste
  • 2 tablespoons Green Peas (boiled and coarsely mashed)
  • 1/4 cup Carrot (Grated)
  • 1/4 cup Paneer/ Cottage Cheese (Grated)
  • 2 tbsp Beetroot (Grated)
  • 1 tbsp Coriander (Finely Chopped)
  • Salt to taste
  • 4 Teaspoon ghee for roasting.

Method

  • Mix flour, oil and salt in a bowl. Now knead it in a soft dough using enough water. Do not let the dough be too loose or too stiff. Cover up and set aside for 15 minutes.
  • In another bowl mix all the other ingredients apart from ghee to prepare stuffing. Divide it into four equal portions and set aside.
  • Now take the dough and divide it into four equal portions.
  • Divide the stuffing into 4 equal portions and keep aside. Now take one portion of the dough, roll out slightly, fill in the stuffing of one portion and bring all the end of the rolled dough together. Ensure to seal the ends firmly.
  • Roll out again into a full round paratha.
  • Roast it on a preheated griddle with some ghee until golden brown dots appear on the paratha. Your vegetable paneer paratha is ready.

Beetroot Paratha

Ingredients

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon oil
  • Water as required
  • 2 beetroots (finely grated)
  • 1/4 cup roasted peanuts (coarsely pounded)
  • 1 teaspoon roasted cumin powder
  • 2 green chilies (finely chopped)
  • 1 small onion (finely chopped)
  • Finely chopped coriander leaves
  • Salt to taste

Method

  • To In a large bowl add in whole wheat flour and some salt, mix them. Now add in water to make a soft pliable dough. Coat the dough with a teaspoon of oil, knead a little more and set aside.
  • Divide the dough into equal portions.
  • For the stuffing, heat oil in a heavy bottomed pan.
    Add in the grated beetroot with a dash of salt and sauté on medium heat until it becomes tender. Once the beetroot is tender, turn off the heat and allow it to cool.
  • Now in a mixing bowl add chopped onion, the sautéed beetroot, chopped coriander, finely chopped green chilies, cumin powder, Peanuts, and finally some salt. Mix all the ingredients well and divide these into equal portions.
  • Now take one portion of the dough, roll out slightly, fill in the stuffing of one portion and bring all the end of the rolled dough together. Ensure to seal the ends firmly.
  • Roll out again into a full round paratha.
  • Cook the paratha on a preheated griddle. Roast with ghee until golden brown in color, flipping sides of the paratha.

Ingredients

  • 1 tablespoon chopped fenugreek leaves
  • 1 tablespoon grated bottle gourd
  • 1 tablespoon grated carrot
  • 1/2 cup whole wheat flour
  • 2 tablespoons curd
  • A pinch of turmeric powder
  • 1/4 teaspoon cumin seeds powder
  • Salt to taste
  • 3 teaspoons of Ghee/oil for roasting

Method

  • Take a big mixing bowl and mix all the ingredients together apart from flour. When all the ingredients are mixed add the flour to it and make a soft pliable dough.
  • Divide the dough into 6 equal portions. Add roll out each portions in to thin/thick circles.
  • Heat a griddle. Cook each paratha and roast with ghee till both the sides turn brown in color.

Carrot Cheese Paratha

  • 1 cup Wheat Flour
  • 2 Carrots (Grated)
  • 1/3 cup Cottage Cheese (Grated)
  • 1 teaspoon Roasted Jeera/ Cumin powder
  • ½ teaspoon Chat Masala powder
  • Salt – to taste
  • Oil / Ghee to roast
  • Water – as required to form the dough

Method:

  • In a wide mixing bowl add wheat flour, salt and mix it. Then add water as required to form a dough. Add ½ tsp of oil and knead it again. Once the dough as achieved a pliable consistency, set aside the dough and allow it to rest.
  • Dry roast the grated carrot for 5 minutes and then in a mixing bowl add carrot, cheese, jeera powder, salt and chaat masala. Mix them all together, also ensure that you do not add much salt as chaat masala too contains salt. 5mins.
  • Roll a small portion of dough, add some stuffing, bring the corners of the dough together and seal them. Now roll it again into a thin/thick paratha.
  • On a preheat griddle, cook the paratha, drizzle oil/ghee to roast.

Potato Paratha

  • Oil for dough
  • 5 Potatoes (Boiled and mashed)
  • 1 Onion (Finely Chopped)
  • Cilantro/ Coriander (Finely Chopped)

  • Chaat Masala.
  • 1 teaspoon lemon juice
  • 1/2 Teaspoon chili powder
  • Oil/ghee for roasting.

Method

  • Make a very soft pliable dough using dough, salt, oil and water. If the dough is not smooth then it will give hard time rolling. If the dough is hard (not soft) then it will break while rolling and stuffing will come out from the edges. Once the dough is prepared set it aside.
  • In a nixing bowl add potatoes, onion, cilantro, salt, lemon juice, chili powder and a dash of chaat masala.
  • Divide the dough and stuffing into equal portions.
  • Now take one portion of the dough, roll out slightly, fill in the stuffing of one portion and bring all the end of the rolled dough together. Ensure to seal the ends firmly.
  • Roll out again into a full round paratha.
  • Cook the paratha on a preheated griddle. Roast with ghee until golden brown in color, flipping sides of the paratha.
